Best Strawberry Cake Recipe


– 2 cups all-purpose flour – 1 tsp baking powder – 1/2 tsp baking soda – 1/2 tsp salt – 1/2 cup unsalted butter, softened – 1 1/4 cups granulated sugar – 2 large eggs – 1 cup buttermilk – 1 tsp vanilla extract – 2 cups fresh strawberries, diced

Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a medium bowl, sift together flour, baking powder, baking soda, and salt.

In a separate bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.

Gradually add flour mixture to the butter mixture, alternating with buttermilk and vanilla. Beat until just combined.

Fold in diced strawberries.

Pour the batter evenly into prepared cake pans and smooth the surface with a spatula.

Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Let the cakes cool in the pans for 5 minutes, then transfer them to wire racks to cool completely.

Once cooled, frost the cake with whipped cream and serve.
